Food Post #1: Lechon Kawali with a twist

Written on 1/21/2008 – 12:53 am | by keysinunez.com | 6,524 Views

Ever since my marriage, I’ve developed a love for cooking. I’ve started cooking different meals for my wife (since we’re poor and we can’t househelp). Of course, I started with the basics. The simple ones, gradually evolving to more complicated dishes. This isn’t the first time I made Lechon Kawali. It’s the first time though, that I cooked it using a thin-assed pot. Fortunately, due to my madcookingskillz, it turned out to be awesome.

Here’s my simple recipe:
Lechon Kawali

Ingredients:
1. 1/2 kilo Pork Belly
2. about 5 cloves of Garlic - crushed
3. a dash of Pepper
4. a pinch of Salt
5. a dash of Rosemary
6. Water for boiling
7. Oil for deep frying

Mix all ingredients in a pot, and boil for an hour, or until the pork is tender. Set aside and let cool. In a think pot, heat cooking oil and then blanch your porkbelly. Set aside and let it cool down. Deep fry pork belly until golden brown, or until you see blisters on the skin. For crispier skin, sprinkle cold water in the pot while cooking. Be careful though, the oil’s gonna be extremely hot. Serve with a sawsawan of vinegar, soy sauce, garlic, and some sili.

*I usually use a kaldero instead of a pan (pan = more oil, more talsik, more pain LOL)

Enjoy!

I've always wanted to try cooking lechon kawali, but I haven't mustered the courage to face the deadly oil firing off the pan. Someday, someday...

And sorry about the mess that is MyJournal. Our bad.
